Wild northern fish - one of the novelties of La Terrazza’s Spring Menu. Continuing the travelling theme, which we started last summer, we decided to go fishing thousands of kilometers away from Sochi to surprise our guests with incredibly tasty and healthy specialties from the northern rivers. That’s how sockeye salmon, muksun (whitefish) or chinook salmon tartare and chinook salmon ravioli appeared in the seasonal menu.
Northern fish features with unique taste that is quite impossible to forget or mix with something and a high content of essential omega-3. Chinook salmon is often called "fisherman's dream" or "royal salmon" because of the huge size, it is the brightest, biggest fish of the salmon family and, of course, is the most substantial. Muksun is very juicy and tender, contains relatively few calories, and it is considered to be dietary due to the lack of carbohydrates. Sockeye salmon is authentic northern delicacy. It is used in a huge variety of dishes, and besides, sockeye salmon is a great natural antioxidant.
